Gruyère is a particularly slow-ripening and especially spicy Swiss cheese. He comes from the area around the town of Cruires of the same name in the province of Freiburg. Or? Not necessary: A court in the United States has ruled that other producers may call themselves cheese cheerleaders.
The reason given by the court: Consumers in the United States generally understand crude as a mild, melting cheese – regardless of its origin. Gruyère is treated differently than champagne, for example: the so-called only bright wine from French champagne. The same goes for cognac (a part of France) or French Rockford cheese.
Request from Swiss cheese makers
Swiss cheese makers want to appeal the court ruling from the US state of Virginia, said Philip Bartett, 61, director of the Flick Cruyer Producers Association, when asked by Flick. “Gruyere is a centuries-old, traditional recipe and represents a region in Switzerland,” he argues.
In this country, it is produced in the regions of Croer Freeborg, Bern, Newsett, Watt and Jura. There are also Gruyère makers in France. This is because Swiss cheese makers settled there many centuries ago. The name is preserved in Europe. However, this does not apply to the United States. For years, American makers have been selling cheeses under the name Croyer, which has little to do with the local recipe.
“When a consumer in the United States buys a cruiser, he doesn’t know what to expect,” Bartett says angrily. Are there holes in the cheese or not? What milk is it made of? “Swiss Gruyère producers boast that they use only raw cow’s milk, which is only available as natural fodder (hay in the summer and hay in the winter).” In the United States, they use cheap milk.

Gruyere makers have been taking action against American cheese makers for years. Some of them volunteered and now call their cheese “Alpine style”. At the legal level, however, the fight to preserve the Swiss cheese trademark has so far failed. “This is an eternal debate with the United States,” Bartett sighed.
It seems unlikely that a solution will be available soon. For example, the brand controversy over the beer name Budweiser has been going on for over 100 years! An American and a Czech distillery claim their name. No final decision has been made yet.
