Italian researchers have developed the perfect pizza dough without yeast – rolling pin

Yeast was once indispensable for the perfect pizza dough. The unicellular organism feeds on sugar, produces carbon dioxide, and therefore is responsible for the light and airy dough. Italian pizzas usually leave the yeast dough to rise for at least a day before molding it into a pizza.

Scientists from Federico II University of Naples have published a groundbreaking research paper on the topic. You want perfect pizza dough made in lab conditions – with absolutely no yeast.

The team, which includes a professional pizza maker, prepared the dough by mixing water, flour and salt and placing it in a hot sterilizer, an industrial device that controls temperature and pressure.

With carbonic acid for a perfect dough

From there, the process is similar to the way carbonic acid is made in lemon juice. The gas melts in the dough under high pressure, and when the pressure comes out during baking, bubbles form in the dough.

According to author Ernesto Di Maio, “The key to this process is to design the rate of pressure release so that the dough that likes to gently stretch is not stressed.”

After many experiments with small samples of dough, the researchers finally came to a satisfactory result, which they published in the Journal of Fluid Physics. However, the process is not yet suitable for mass production of yeast-free pizza. In the next step, the researchers want to purchase a larger autoclave to test production of whole pizzas.

Two more years of patience

Di Maio expects the technology to be developed enough to sell to food producers within two years, if all works as intended. Until then, pizza lovers with a yeast allergy will have to be patient. Because you cannot try the method at home without the necessary equipment.
